Sweet Potato Apple Soup

Wintertime in the Rockies means soup (even if it is 70 degrees outside)! I love soup. I could eat soup all day every day. But it is particularly comforting when the weather is forbidding and you need something to warm your body and your soul (east coast friends –  this recipe is for you right now!). This creamy soup is delicious as an accompaniment to a larger meal or just by itself. I usually top it with some roasted nuts and seeds and eat it with fresh french bread and butter. And it’s so delicious it will make you want to lick the bowl clean! 🙂

Ingredients

Instructions
  1. Place sweet potatoes in a large saucepan. Add vegetable stock, apple, and onion. If needed, add water until sweet potatoes, apple, and onion are covered.
  2. Boil for 30 minutes or until sweet potatoes are soft.
  3. Blend in blender until smooth, adding coconut milk for a creamy texture.
  4. Add spices, stir, and serve. For reference I use 0.5 tbsp garlic powder, 2 tsp salt, 2 tsp ground black pepper, 2 tsp cayenne, and 1 tsp cinnamon, but I like my soup spicy.
