Christmas Salad

This is a salad I’ve been making a lot recently because it’s so simple, delicious, and super healthy. It is also very festive and compliments any meal.

The recipe below is the basic recipe but you can build on it to create your own version. For example, I made the salad according to the recipe below and added mushrooms, yellow peppers, and arugula when I made it last week for a Christmas potluck at work. Instructions
  1. Steam brussel sprouts for 5 minutes, or until they turn bright green. Immediately rinse under cold water until brussel sprouts are cooled. Lay out to dry on paper towels.
  2. Combine the baby kale, cranberries, and cherry tomatoes in a large salad bowl.
  3. Mix all Dressing Ingredients in a small bowl or mason jar.
  4. When you're ready to serve the salad, mix in the brussel sprouts and toss with the dressing. Sprinkle with parmesan cheese and enjoy!
