The healthy fats from the coconut keep you feeling full longer, the carbs from the oatmeal and chia seeds keeps hydrated and powering through the day, and the chocolate adds a rich taste that will appeal to any chocolate-lover’s heart. This recipe works great if you make it ahead of time and either eat it cold or microwave it for 30 seconds. Instructions
  1. Soak chia seeds in coconut milk, stirring occassionally until it resembles a thick rice pudding (around 1 hour)
  2. Cook oatmeal and water in a medium saucepan for approximately 10 minutes or until water is absorbed and oatmeal is cooked.
  3. Add chia seeds, shredded coconut, honey, and powdered cocoa.
  4. Eat immediately or transfer into individual servings and refrigerate.
