  1. Cook ground lamb until it is crumbly and almost done. Mix with tomato sauce to create your meat sauce.
  2. Add a thin layer of meat sauce to the bottom of a 9″x13″ pan. Next add a layer of sliced butternut squash, followed by a layer of kale. Top with sliced mushrooms and ricotta cheese. Repeat to desired thickness (sauce, squash, kale, mushrooms, ricotta cheese).
  3. Complete with a layer of meat sauce. Cover with shredded mozzarella and asiago cheeses.
  4. Bake at 350 degrees for 45 minutes. Once cheese is melted and bubbly, set oven to broil and cook until cheese is lightly browned.
  5. Let cool slightly (no more than 5 minutes), slice and serve. Enjoy!
