Apple Bread

This recipe was originally inspired by one Emelie Forsberg (one of my favorite ultra-running bakers) posted on her blog. You can find the original here. I made the original version once, but quickly tired of shredding carrots. So I substituted the carrots with half a cup of unsweetened apple sauce and added some pecans and it was DELICIOUS!

I’ve been using the apple bread as fuel for my long runs, breakfast on the go, and desert after dinner. During the Frozen Dead Guy Fat Ass, I realized that my hands were swollen from lack of electrolytes and decided the perfect thing to add to the apple bread, Tailwind Nutrition unflavored endurance fuel. It adds a little extra calories, which almost never hurt on the run, and more importantly provides a very balanced array of electrolytes including sodium, calcium, potassium, and magnesium. And the best part is, Tailwind contains absolutely ZERO unnatural ingredients. I hope you enjoy this recipe.

Ingredients
Servings: squares
Instructions
  1. Mix water and yeast. Let sit for 5 minutes.
  2. Add remaining ingredients and mix well. Preheat oven to 425 degrees. Spray a glass pan with cooking spray. I use an 9"x9" pan but you can use a 9"x13" if you want them thinner.
  3. Let sit for 30 minutes. Mix again and spread evenly over glass pan.
  4. Let sit for another 30 minutes. Bake in oven for 30 minutes or until lightly browned on top.
  5. Cut into squares. Eat immediately or store in an airtight container in the refrigerator for up to a week.
